Food Matching: The great body and the elegance of the wine make it suitable to deal with the best dishes of the Tuscan tradition: braised dishes, roasted, small game and aged cheeses such as pecorino.
Vinification: De-stemming and crushing, fermentation in stainless steel at a temperature of 28-30 ° C, maceration on the skins for 28 to 40 days.
Aging: At least 30 months in oak barrels of 32 Hl. Followed by 4 months of aging in bottle.
