Production Area: Coastal area of Maipo Valley, near Maipo River. SOIL - Piedmont soils of the Coastal Mountain range: granite origin and clay loam texture. CLIMATE - Morning mist and strong maritime influence due to the proximity to the Pacific Oceanand Maipo river. Temperate Mediterranean climate. Temperatures from December to March: Max. 28ºC-29ºC – Min. 12ºC-15ºC.

Aroma: Our Sauvignon Blanc Reserve 2019 is fresh, crisp and clean with zesty flavors of passionfruit, critics notes with subtle hints of green herbs and white pepper.
Taste: On the palate is intensely flavored with balanced mouthwatering acidity and a generous finish.
Cellaring Potential: 2 - 3 years.
Food Matching: With seafood, cheese, oysters or salad. serve at 9-10ºC. TOTAL ACIDITY (H2SO4): 4.98 g/l -- pH: 3.02 -- RESIDUAL SUGAR: 1.63 g/l.
Vinification: HARVEST - Hand-picked grapes during the second week of March. FERMENTATION - Cold pre fermentative maceration on its lees during 8 days at 6ºC. Alcoholic fermentation between 11ºC -13ºC with selected yeast. Post fermentative maceration during 60 days on it lees.
