Vinification: Soft pressing of the grapes, followed by fermentation in stainless steel tanks at a controlled temperature of 16 ° C. The base wines are vinified separately according to the vineyard of origin and then carefully assembled to create the cuvée.
Aging: Aging on the lees for a minimum period of 24 months in cellars at a constant temperature of 12-15 ° C.
