Description
'Kairos' from the Greek word meaning: "opportune, convenient, right for that moment..." This name was used not by design but from the evolution of the winery. As the younger bother of 'Harlequin', it is sourced from the same vineyards, but in years of less favourable weather, the vines are managed exactly the same, but the quantitiy and sometimes quality differ from that of Harlequin. Thus the opportunity for creating Kairos.

Aroma
The rich, complex nose releases fragrances ranging from fruit jams to wild red berries and cherry followed by nuances of spicy cocoa, vanilla, cinnamon and an appealing balsam-like finish.
Taste
Generous and velvet smooth on the palate, it exhibits remarkable harmony and a luscious, drinkability with a long lingering finish.

Risotto with mushroom, braised beef, steak, osso buco
Vinification
Organic fertilization and hand-pruning; shoot-thinning, leaf-pulling, cluster-thinning. Th e grapes are harvested by hand based on the ripeness level of each individual variety; following a careful quality selection, the clusters are placed on drying trays, just for the time necessary to complete the entire harvest, from 0 to 40 days.
Vinification and maturation: vinification is performed in steel and in concrete vats; cryomaceration and fermentation, with ambient yeasts, take some 20-25 days, with the sole operation of manually stirring the must and pomace. 8-10 days aft er drawing-off.
Aging
The wine goes to French oak barrels, where it passes at least 36 months without any racking. It receives a further minimum of 1 year in bottle
