Food Matching

The consummate partner for this wine is slowly braised lamb or veal shanks and of course bbq’d steak.

Vinification

Fermented in a dozen different batches and then each subjected to slightly different maturation conditions. The various components contribute to the complexity of the final blend. American oak chips were added during fermentation so as to aid in integration of fruit and oak. After fermentation, there was some maturation in American and French oak prior to blending to achieve vanilla and toasty oak flavours that compliment rather than dominate the varietal fruit flavours.
