Notes of apricot,apple, and cantaloupe balanced by peach pineapple and honeydew.

Taste

With a velvety texture on the entrance, this Chardonnay demonstrates a clean and fresh mouth with a fruity mid palate complemented by layers of ripe pineapple, nectarine, mandarin orange,and honeysuckle. The finish is fresh and held together by lively acidity.

2 - 3 years.

Food Matching

This Chardonnay goes well with salmon Carpaccio, goat cheese, fat fishes, any plate with a creamy seafood sauce and white meat. Serve at 10º-12ºC. TOTAL ACIDITY : 3,4 g/l -- PH: 3,3

Vinification

HARVEST - Hand-picked grapes during the first week of april. FERMENTATION - Cold prefermentative maceration. 20% of the wine was fermented and aged in french oak barrel during 2 - 3 months, with battonage, two times a week. No Malolactic fermentation to preserve the acidity. 85% of the wine stays in stainless steel tanks.

Aging

20 % was fermented in old French barrels in contact with the lees for 2-3 months.
