Aroma

Opens with aromas of sweet plum and black cherry, complemented by oak spice notes of nutmeg, anise and vanilla.

Taste

A smooth entry on the palate builds quickly into lush, ripe, dark cherry and black currants, backed up with sweet oak and an excellent tannin structure.

3 - 4 years.

Food Matching

With cheeses, meat stews withsauces, roast beef, grilled lamb, pork and barbecues. Serve at 60°F -64°F (16ºC - 10°C). TOTAL ACIDITY (H2SO4): 3,26 g/l -- PH: 3.8

Vinification

HARVEST -- Hand-picked grapes during the last week of April. FERMENTATION -- Cold maceration during 3 days 8ºC. Fermentation at 26-27ºC with selected yeasts in stainless steel tanks.

Aging

40 % was age in four to five year old French and American oak barrels during 6 month. To allow to rounder tannins and a good texture.
