Taste

Full bodied, with fine tannins and notes of dark cherry, blackberry, dark currants and baking spices. An elegant old world style with a nod to the new world.

Food Matching

Great match with bbq’d or sous vide steaks, braised short ribs, rack of, or roasted lamb and burgers.

Vinification

Whole berry fermentation, with manual battonage taking place 2-3 times daily. Primary fermentation lasted 14 days at which point we had gained optimum extraction. The wine was then very gently pressed and then placed in a mixture of new and neutral French oak barrique on the lees for 24 months. 25% brand new French oak (Med. toast from Tonnellerie Taransaud, and Sylvian)
