Food Matching

Excellent paired with red meats stewed or roasted, cured meats. Serving Temperature 16-18°C

Vinification

Vineyards trained using the counter-espalier system and pruned using the cordon spur method (4350 plants/ha & 7500kg/ha). 100% Volcanic soil. Harvest is second half of October. The grapes are destemmed & crushed, the resulting product is set to macerate in moderate size fermentation tanks, where it is constantly kept in contact with the skins & must-wine thank to continuous racking. The maceration-fermentation lasts about 10-12 days at a temperature of 25-27°C.

Aging

After maceration, the wine is separated from the skins without using additional pressing. The resulting product is set to age, partially in steel tanks & part in casks. During this entire aging process the wine is regularly decanted.
