Description

Le Dauphin d'Olivier hails from the same vineyard as its elder, Chateau Olivier Grand Cru Classe de Graves. It is raised and vinified by the same team.  It can be enjoyed young and allows one an introduction to the main label. The winter of 2016 was mild and wet.  However, a spell of fine weather occured during flowering. There was very little rain over the summer. Temperatures were slightly above seasonal averages. Beautiful sunny days and cool nights in October were conducive to excellent ripening, and aromatic freshness.

Aroma

The nose is very aromatic with aromas of ripe red fruits, jam and slightly smokey.

Taste

The mouth is long, round and fleshy. The tannins are silky and elegant.

Vinification

Harvest from 28th September to 20th October. Hand picked, in small baskets. Vinification: Slow fermentation with temperature control, with reduced pumping-over volume.

Aging

12 months in barrels; 35% new barrels
