Production Area: Over 45 soil series are found in the Paso Robles AVA. These are primarily bedrock derived soils from weathered granite, older marine sedimentary rocks, volcanic rocks and younger marine sedimentary rocks of the Miocene age Monterey Formation featuring calcareous shale, sandstone or mudstone. Soil diversity is the norm and a vineyard block may commonly contain several different soil types. Diversity is the norm with the common element being calcareous soils with a high PH range.

Description

The Paso Robles (AVA) is home to more than 180 wineries and 26,000 vineyard acres focusing on premium wine production. The distinct microclimates and diverse soils, combined with warm days and cool nights, make growing conditions ideal for producing Cabernet Sauvignon with dense jammy fruit flavors and soft textures

Food Matching

This wine loves full flavored meat that have been cooked with a direct fire method (not too shabby with dark chocolate either). Best when decanted for 45-60 minutes before serving.

Vinification

Hand harvested and sorted the grapes are chilled to 50 degrees Fahrenheit before crushing and placing into small two ton fermenters. The grapes were inoculated with Enoferm BDX yeast and allowed to ferment with a temperature control over the course of nine days. The wine was pumped over three times a day during this period.

Aging

After 45 days, the wine underwent malolactic fermentation and was racked into a combination of center of France oak barrels that were used two and three times. The wine ages in French oak for 8 months before bottling.
