This wine loves full flavored meat that have been cooked with a direct fire method (not too shabby with dark chocolate either).
Best when decanted for 45-60 minutes before serving.
Vinification
Hand harvested and sorted the grapes are chilled to 50 degrees Fahrenheit before crushing and placing into small two ton fermenters. The grapes were inoculated with Enoferm BDX yeast and allowed to ferment with a temperature control over the course of nine days. The wine was pumped over three times a day during this period.
Aging
After 45 days, the wine underwent malolactic fermentation and was racked into a combination of center of France oak barrels that were used two and three times. The wine ages in French oak for 8 months before bottling.
