Food Matching
It is traditionally served with sweet breads (brioche and panettone), cream and Chantilly-based sweets, and fruit desserts.
It can also make a fine match though for savoury snacks with preserved fish (anchovies, herring, mackerel), soft cheeses and cold meats.

Vinification
Harvest: early September.
The grapes undergo gentle pressing before fermenting at a controlled temperature in pressure tanks until the alcohol reaches 5% by vol. Then the temperature is reduced to stop the fermentation, and the wine remains on the fine lees for around 2 months.
